Turkey, Cheddar, Red Onion & Chilli Quesadilla

Serves: 4
Ingredients
- 4 large soft flour wraps
- 2 thinly sliced large red onions
- 1 tbsp chopped red chilli
- 2 tbsp olive oil
- 100g strong Cheddar cheese, grated
- 150g wafer thin sliced ham
- 150g cooked British turkey, sliced, leg meat is my preference
- 2 tbsp roughly chopped, fresh coriander
Method
- Gently heat a frying pan over a moderate heat, add the oil, onions and chilli for about 15 minutes.
- Spoon onto a plate, wipe out the pan with a paper towel.
- Divide the ingredients between the 4 four wraps.
- Sprinkle a generous amount of cheese onto one half of a wrap.
- Place the ham, turkey, onions and more cheese on top.
- Add a little coriander and fold the wrap over, to make a half moon shape.
- Heat large frying pan again and brush lightly with a little oil.
- Place 2 wraps into the pan and cook gently over a medium heat for 1-2 minutes on each side, until golden and crisp.
- Repeat the process and serve with sweetcorn chutney on the side.
