Chicken & Ham Pie


Makes 25 portions

Ingredients

  • 1000g Chicken Breast 
  • 125g Cooked Ham/Bacon
  • 2.5tsbs Vegetable Oil 
  • 250g Leeks (Diced) 
  • 200g Mixed Vegetables 
  • 112g Margarine  
  • 112g Flour  
  • 1.9lt Milk 
  • 100 Grated Cheese
  • 875g Puff Pastry 
  • 2 Chicken Stock Cubes 

Method

1. Steam the chicken for 20 mins until cooked and dice into chunks when cooled

2. Meanwhile, sweat the onions off in a pan, season with the stock cubes then melt the margarine gently with the onions

3. Add the flour and cook for 2mins, stirring constantly. Add the milk a little at a time stirring constantly then cook gently for 5mins until the sauce is thickened

4. Dice the sliced ham and stir into the sauce with the grated cheese, diced chicken and mixed vegetables

5. Check the seasoning and consistency of the sauce 

6. Divide into tins and top with pastry – egg wash the pastry 

7. Bake for approximately 40-45 minutes until the pastry is golden brown
