Murmur

Located in The Arches on Brighton seafront overlooking the West Pier and sister restaurant to the award-winning 64 Degrees, Murmur was opened by Michael Bremner in July 2017 to offer a different dining concept, serving healthy and honest food for lunch and dinner in a stunning beachside location. The restaurant is named Murmur from the word murmuration which is the shape that the starlings make when they flock and fly between the two piers here on the coast, with the logo representing the six arches in which the restaurant is located. Murmur has 37 covers inside and a further 40 covers on the terrace overlooking the beach, is children friendly throughout the day and dogs are welcome on the terrace.


Love British Food chatted to Michael Bremner about his restaurants, his love for seasonal local produce and his favourite ingredients:


Why do you do what you do?


I’ve always enjoyed cooking, and I’ve worked in kitchens since I left school. I love the environment of being in a team in the kitchen and to be proud of the food we’re serving.


What do you enjoy most about your job?


The ability to be creative with what I do and the camaraderie within the kitchen.


What’s do you enjoy the least about your job?


TripAdvisor. I think reviews and feedback are incredibly important, but too often people just go on there to criticise without any constructive comments, nor any opportunity for discussion.


What achievement for the restaurant are you most proud of?


Being named Best Newcomer in the Brighton and Hove Food and Drink Awards in our first year

Yes


What do you think is best about using British Produce?


We’ll always try to get in the best produce, so often we can actually go to the source to check it out. It’s also important to try and reduce any environmental impact as much as possible, so buying produce from closer to home will obviously help with that.


Why should people buy British?


Supporting local economy and reducing environmental impact.


What is your most popular dish?


Lobster Croquettes


And where is your Lobster from?


Our lobster is from our local fish supplier – Brighton & Newhaven Fish Sales (BNFS), all local to British Isles.
