Restaurant of the month: July 2020
64 Degrees
Tucked away in the Brighton lanes, 64 Degrees is a small restaurant with an open kitchen by Great British Menu 2017 winner Michael Bremner, where passionate chefs concoct an evolving menu of tasty small plates using fresh, local produce.
64 Degrees opened in October 2013 and has 20 seats – 10 at tables and 10 at the chefs’ pass overlooking the open kitchen where you can interact with the team as they cook the food right in front of you.
Love British Food chatted to Chef Michael Bremner to find out more about his restaurant.
Why do you do what you do?
I’ve always enjoyed cooking, and I’ve worked in kitchens since I left school. I love the environment of being in a team and to be proud of the food we are serving.
What do you enjoy most about your job?
The ability to be creative with what I do and the camaraderie within the kitchen.
What do you enjoy least about your job?
TripAdvisor. I think reviews and feedback are incredibly important, but too often people just go on there to criticise without any constructive comments, nor any opportunity for discussion.
What achievement for the restaurant are you most proud of?
Coming 16th in the National Restaurant Awards 2016.
Do you use British Produce?
Yes
What do you think is best about using British Produce?
We’ll always try to get in the best produce, so often we can actually go to the source to check it out. It’s also important to try and reduce any environmental impact as much as possible, so buying produce from closer to home will obviously help with that.
Why should people buy British?
Supporting local economy and reducing environmental l impact, but also because more often than not it will be the best quality.
What is your is your most popular dish?
We change dishes almost daily so they don’t often stay on long enough to have a most popular dish. At the moment though we have king prawn tacos on the menu, which fly out.
