Indulge in British food! Seek out in-season fruits and vegetables, quality British meat and some of our country’s fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd’s Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal – British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Sausage Casserole Print Email

Serves 4

Recipe supplied by Heart of England Fine Foods,

Ingredients
450g/1lb pork sausages
225g/8oz onion, sliced
1 teaspoon flour
150ml/5 fl oz red wine
150ml/5 fl oz brown ale
1 clove garlic, crushed
1 tablespoon mixed chopped herbs
2 large baking potatoes, peeled and sliced
salt and pepper to taste

Method
Brown the sausages with a little oil in a flameproof casserole and remove to a plate.

Lightly fry the onions until golden brown and add the flour to soak up the juices and gradually stir in the red wine and brown ale.

Replace the sausages, then add the garlic, herbs and seasoning.

Put the lid on and bring to simmering point, turn down the heat and simmer gently for 30 minutes.

Fry the potato slices in a little butter and oil until golden brown

stir the casserole well and place the potatoes on top.
