Indulge in British food! Seek out in-season fruits and vegetables, quality British meat and some of our country’s fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd’s Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal – British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Berry Delight Pudding Print Email

Ingredients (serves 2)

  • 5 slices wholemeal bread (crusts removed)
  • 12oz/300g mixed berries (e.g. blackberries, blueberries and raspberries)
  • 1 tablespoon sugar
  • Pinch of nutmeg
  • Juice of half a lemon
  • Sprig of mint (optional)
  • Low fat yoghurt to serve (optional)

 

Method

  1. Layer a high sided bowl with four slices of wholemeal bread (overlap in order to cover all gaps).
  2. Gently heat the berries, sugar, nutmeg and lemon juice in a saucepan for five minutes, or until the juices start to run, adding a little water if necessary.
  3. Place the warmed fruit and juices in the bowl on top of the bread and cover the top with the remaining slice of bread.
  4. Put a slightly smaller plate inside the bowl and weigh it down. Leave in the fridge overnight.
  5. The following day, turn the bowl over and slice the pudding.
  6. Serve with low fat yoghurt and a sprig of mint.
