Indulge in British food! Seek out in-season fruits and vegetables, quality British meat and some of our country’s fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd’s Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal – British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Medallions of Staffordshire Beef with a Mustard Crust Print Email

Serves 4

Recipe supplied by Heart of England Fine Foods.

Ingredients
4x6oz - Rump medallions
2 tbsp - English mustard (Dijon if you prefer)
1 - Finely diced onion
6 - Slices of bread (crusts removed ) whizzed in food processor
1tsp - Chopped chives
Flour to dust
Olive oil
Salt and Pepper

Method

Sweat the onion in some olive oil until soft and put into a bowl. Mix in the mustard, chives and bread crumbs.

Season and dust one side of the beef with flour then add a coating of the crust.

Pre-heat a pan with some oil   and put the steak, crust side down, to seal until golden.

Turn over and cook the steak to your liking.

Serve with some garlic butter as demonstrated
